{Adventures In} Baking

The kitchen is not my thing. We bought our house almost 3 years ago and since then, I'm trying to make it my thing. I figure that if you are going to be a wife and a mom, you need to learn how to cook and bake, right?!

While lurking around on Pinterest some time ago, I found a super easy cupcake recipe that requires two ingredients. No shit. Two ingredients - cake mix and club soda. Being that I can barely follow a recipe, two ingredients is right up my alley. So I gave it a go.

See, I wasn't kidding.
  • Step 1: Box of cake mix (in this case, red velvet).
  • Step 2: Use 1 1/2 cup of Club soda.
  • Step 3: Combine, mix on medium speed and put batter in muffin pans.
  • Step 4: Bake at 350 degrees for roughly 18 minutes.
  • Step 5: BOOM!

Best part about this recipe is that since it doesn't have as many ingredients, it doesn't have as many calories or fat. Who can use a little less of that in their lives? Ummm, me!

Survey says...

They are freaking good! Like, you can't tell they don't have eggs or oil good. And to get them ridiculously moist? Right after they cool, place them in the refrigerator for a few hours (at least) or do what I did and do it overnight. You can thank me later.

Decorate and you've got yourself a healthy healthier dessert option.
